Ice Cream!

Sure it is...

In the iron chef Mackerel Battle, the Iron Chef French prepares 5 dishes, one of which is the Mackerel Ice Cream...which didn't do so well...

MARGARITA JELL-O

Use one large box (4 cup size) or two small boxes of lime Jell-O. Add 2 cups boiling water to gelatin. Stir until dissolved, about 2 minutes. Add 1 1/4 cups cold water, 1/2 cup tequila and 1/4 cup Triple Sec. Chill until set. Makes 8 servings, 1/2 cup each, or about 16 little "Dixie cup" servings.

Bocconcini sandwiches are my weakness in summer...

Grilled eggplant, asparagus, zucchini, peppers, sun-dried tomatoes, fresh basil finished with olive oil and balsamic vinegar on a nice (Terra Breads!) baguette. And of course the bocconcini. Extra points for mozzarella di bufala (how the heck do you milk a water buffalo anyway?!).

Yum.

Now I'm hungry.
