this is my nonnas recipe...so good and easy

put water in pot, add stewing chicken, a little olive oil, and boil

as scum from chicken rises to top, remove with small strainer

after scum is dont, no more rises, add two boullion cubes (both chicken flavor or one chicken and one mushroom) one diced onion, 2 peeled carrots cut in threes, 3 stalks of celery cut in 3 threes, add whole clean mushrooms if desired and continue boiling for 2 hours.

After remove chicken and bones, throw bones in garbage and chicken can go to dog or cat in their food. dont eat it not that tasty after.

Blend soup if desired, and add starch or cream to make a creamy soup

add soup pastinis (little soup pastas) or break up spaghetti

done!!!

Yum.

When I do it, I also do the following:

1 cup matzo flour
2 tbsp butter, *chilled*
1 egg
salt, pepper
1/2 tsp baking powder (optional)
water to make a soft dough

Make big matzo balls and boil them (OK to just dump them in the broth) for 30-40 minutes. Serve hot, with kasha varnishkes or other side dishes.

Oy gevalt. Being Jewish has its advantages.
