Who here is a master of the BBQ??? Who's got some good Summer cookin' ideas to share?

What happens when you put 7 live-at-home iDubs in a house with beer and a jacuzzi and a bunch of World Rallye Championship videos?

Yours truly becomes the BBQ master by default. :rolleyes:

Actually I never found much interesting about 'queing. It's pretty straightforward ... control the temp, get the right sauces and flavourings (love those mesquite chips .. can you get them in Canada?). I am a big fan of the northern Japanese BBQ corn! Take an ear of corn, brush with soy sauce / sugar mixture (2:1 by weight), wrap in aluminum foil and throw it on the 'que!

Ribs are another fun thing, albeit messy. Gotta have the mesquite chips to do those right.

This fall I want to do a whole sockeye salmon BBQ. Who wants in? :)

great marinade(sp?) for bbq:cool: :cool:

1/2 C. creamy peanut butter
1/2 C. dry sherry
1/4 C. dark soy sauce
1/4 C. red wine vinegar
1/4 C. honey
1/4 C. oil
1/4 C. ginger, crushed
1/4 C. green onion, minced
1/4 C. cilantro, chopped
2 T. dark sesame oil
2 T. Chinese chili sauce
2 T. lemon juice
6 garlic cloves

Combine everything in food processor and mix.

Marinade pork for up to 8 hours.

Boil and use as mop while grilling.

BBQ Salmon
place salmon on a piece of tin foil, sprinkle dill weed, some salt, pepper over top, then sqeeze some fresh lime juice and lemon juice over top, close up the tin foil and bake for about 20 -25 min or till done to liking.. it is so yummy :D

I got lots, but we will start with two.....one for Ribs and one for salmon.

Salmon--> Two fillets of salmon, about 7 to 9 oz each.
Place in a marinade consisting of

1) 1/2 cup Brown sugar
2)1 tsp of cayenne
3)1 tsp of salt
4)1/4 cup of soy
5)1/2 cup of hot water
--> with until sugar is incorporated into the fluids.

Place salmon in marinade for 2-3 hours(refridgerated)

Take salmon out of marinade, wrap in tin foil and place on BBq until desired doneness.


Prep -->BBQ Pork Ribs--> 4 racks of pork ribs

Preset oven at 450 F
Place ribs on tray, put in oven and cook until most of the marbled fat is either cooked out or is carmelized

Place ribs in deep tray, cover with equal parts BBQ sauce and water. Make sure ribs are completely covered with the liquids.

Turn oven down to 350 F

Place deep tray with ribs in the oven for 1-1 1/2 hours. Remove from oven and let sit for 20 minutes. Remove ribs from marinade and refridgerate.

Place on BBQ when cool. Brush with BBQ sauce.

I like to marinate my salmon in a mixture of miso, rice wine, soy sauce and sugar, then throw em on the grill. Works with steak too. Mmmm... could use some of that now.

When is wild salmon in season? No more of this farmed crap. Can't stand it anymore...

Just did up a big ass BBQ for myself tonite. Had a nice 12 oz new york steak marinated with a combo of; spicey black bean sauce, jamacian jerk sauce, tequilla lime bbq sauce, tobasco sauce and some peppercorn sauce. Cooked the steak 3 min a side and dumped on some marinate after each flip. Also had some baby potatoes microwaved first to cook through then wrapped in tin foil with a bit of butter and some crushed garlic cloves.(cooks the same time as the steak) In another tin foil packet was some mushrooms, green, orange and red peppers, chopped green onion, and crushed garlic cloves, dumped in some teryaki sauce and then tossed on to cook the same amount as the other stuff. The last bit was some asparagus also done on the bbq but first lightly coated in oil and a pinch of salt. Put it on the que and cook one minute each side. Let the natural sugars carmalize and damn, you have a great meal. Add some red wine or Rickards Red for a bevy and it's all done.

easy

pour a bottle of italian salad dressing, some pepper and salmon steaks of fillets in a contain, and marinade for 2-3 hour...heat the barbie and mmmmmmmmmm......

another....dill weed, olive oil, organo (dried or fresh) and diced fresh basil, salt and pepper and put them on the grill...
